CHILLED CUCUMBER AND BUTTERMILK SOUP

CHILLED CUCUMBER AND BUTTERMILK SOUP;-

Cucumber 2 medium sized
Ginger 1/2 inch knob
Green chilli 1
Mint leaves a few sprigs
Lemon juice 2 tblspns
Buttermilk 2 cups
Salt to taste
Pepper powder 1/2 tblspns


Method:-Peel and wash the cucumber. Deseed and roughly chop. Peel, wash and roughly chop ginger. Wash, deseed and chop the green chilli. Clean and wash the mint leaves. Reserve a few sprigs for garnish and finely chop the rest. Put cucumber,.ginger,green chilli and lemon juice in a blender and blend till smooth. Stir in buttermilk and chopped mint leaves. Season it with salt and freshly ground pepper powder. Garnish with mint leaves and serve chilled
